Ingredients:

For the Potato Pancakes:

  • 4 medium potatoes (peeled)
  • 1 small onion (grated or finely chopped)
  • 1/4 cup all-purpose flour (or use gluten-free flour)
  • 1 large egg
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Fresh herbs (optional, like parsley, dill, or chives)
  • 2 tablespoons olive oil or butter for frying

For the Creamy Yogurt Sauce:

  • 1/2 cup Greek yogurt (or any thick yogurt)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 small garlic clove (minced or grated)
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions:

For the Potato Pancakes:

  1. Prepare the Potatoes:
    • Grate the potatoes using a box grater or food processor. After grating, place them in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible.
  2. Mix Ingredients:
    • In a large mixing bowl, combine the grated potatoes, grated onion, flour, egg, baking powder, salt, and pepper. If you’re using fresh herbs, add them now as well. Mix everything together until well combined.
  3. Cook the Pancakes:
    • Heat a skillet or frying pan over medium heat and add the olive oil or butter.
    • Take a spoonful of the potato mixture and form it into a small patty. Place the patty in the pan, flattening it slightly. Repeat with the remaining mixture.
    • Cook the pancakes for 3-4 minutes per side or until golden brown and crispy.
    • Remove from the pan and place on paper towels to absorb any excess oil.

For the Creamy Yogurt Sauce:

  1. Make the Sauce:
    • In a small bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, salt, and pepper. Taste and adjust seasoning if needed.

Serve:

  • Serve the crispy potato pancakes with a generous spoonful of creamy yogurt sauce on top or on the side for dipping. Garnish with extra herbs if desired.

Tips:

  • Variations: You can add grated cheese (like Parmesan) to the potato mixture for extra flavor.
  • Spices: Add a pinch of paprika or cumin to the pancakes for a little warmth and depth of flavor.
