Creamy Cod with Potatoes

Here’s a simple and delicious recipe for Creamy Cod with Potatoes:

Ingredients:

  • 4 cod fillets (fresh or frozen)
  • 4 medium potatoes (peeled and sliced)
  • 1 onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme (or fresh if available)
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the potatoes:
    Preheat your oven to 375°F (190°C). In a large saucepan, add the sliced potatoes and cover them with water. Bring to a boil, then reduce heat and simmer for about 8–10 minutes, until just tender. Drain and set aside.

  2. Cook the cod:
    In a large skillet, heat the olive oil over medium heat. Season the cod fillets with salt and pepper. Cook the fillets for about 3-4 minutes on each side until golden and cooked through. Remove the fillets from the pan and set them aside.

  3. Make the creamy sauce:
    In the same skillet, melt the butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the garlic and cook for another 1 minute. Pour in the heavy cream and milk, stirring to combine. Add the thyme, lemon zest, salt, and pepper to taste. Bring the sauce to a simmer, then cook for 3–4 minutes, allowing it to thicken slightly.

  4. Assemble the dish:
    In a baking dish, layer the cooked potatoes at the bottom. Place the cod fillets on top of the potatoes. Pour the creamy sauce over the fish and potatoes.

  5. Bake:
    Place the dish in the preheated oven and bake for 15-20 minutes, until the sauce is bubbly and the top is golden brown.

  6. Serve:
    Garnish with fresh parsley (if desired) and serve hot.
