Lemon Butter Chicken Tenders are a delicious and easy-to-make dish that’s perfect for a quick dinner or lunch. Here’s a simple recipe for you to try:

Ingredients:

  • 1 lb chicken tenders (about 6-8 pieces)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest (about 1 lemon)
  • 1/4 cup fresh lemon juice (about 1 lemon)
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper (to taste)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)
  • 1/2 teaspoon dried thyme or fresh thyme (optional)
  • Lemon slices for garnish (optional)

Instructions:

  1. Prep the Chicken: Pat the chicken tenders dry with paper towels and season both sides with salt and pepper.

  2. Cook the Chicken:

    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken tenders to the pan in a single layer. Cook for 3-4 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).
    • Remove the chicken from the pan and set aside.
  3. Make the Lemon Butter Sauce:

    • In the same pan, melt the butter over medium heat.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
    • Add the lemon zest, lemon juice, and dried thyme (if using). Stir to combine and cook for an additional 2-3 minutes to reduce the sauce slightly. Taste and adjust salt and pepper if needed.
  4. Combine and Serve:

    • Return the chicken tenders to the skillet and toss them in the lemon butter sauce until they’re coated.
    • Let the chicken cook in the sauce for another 1-2 minutes to absorb the flavors.
    • Garnish with chopped parsley and lemon slices, if desired.

Serving Suggestions:

  • Serve with steamed vegetables, rice, or a simple salad on the side.
  • You can also add some pasta for a more hearty meal.
