Flatbread Pizza with Tzatziki Drizzle

Ingredients:

  • 1 package of flatbread (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup feta cheese, crumbled
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, thinly sliced (optional, for added crunch)
  • 1 cup cherry tomatoes, halved
  • Fresh basil leaves (optional, for garnish)
  • Olive oil (for brushing the flatbread)
  • Salt and pepper to taste

For the Tzatziki Drizzle:

  • 1/2 cup tzatziki sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Flatbread: Place your flatbreads on a baking sheet. Lightly brush each flatbread with olive oil to ensure they get crispy when baking.

  3. Assemble the Pizza:

    • Sprinkle shredded mozzarella and crumbled feta cheese evenly over the flatbread.
    • Add thin slices of red onion, cucumber (optional), and halved cherry tomatoes on top.
    • Season with a pinch of salt and pepper.
  4. Bake the Flatbread Pizza: Place the flatbread pizza in the oven and bake for about 10-12 minutes, or until the cheese is melted and the edges of the flatbread are crispy and golden brown.

  5. Prepare the Tzatziki Drizzle: In a small bowl, mix the tzatziki sauce with olive oil, lemon juice, and garlic (if using). Stir until smooth.

  6. Serve: Once the flatbread pizza is done, remove it from the oven. Drizzle the tzatziki sauce over the pizza just before serving. Garnish with fresh basil leaves if you like.
