Mexican rice casserole is a flavorful and hearty dish that combines rice, ground meat (typically beef or turkey), beans, vegetables, and Mexican-inspired seasonings. It’s usually baked in the oven until the rice is cooked and the flavors meld together. Here’s a basic recipe to make Mexican rice casserole:

Ingredients:

  • 1 cup long-grain white rice
  • 1 pound ground beef or ground turkey
  • 1 onion, chopped
  • 1 bell pepper, chopped (any color you prefer)
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies (such as Rotel)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups chicken or beef broth
  • Chopped fresh cilantro and sliced green onions for garnish (optional)
  • Sour cream or salsa for serving (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large oven-safe skillet or casserole dish, cook the ground beef or turkey over medium heat until it’s browned and no longer pink. Drain any excess fat if necessary.
  3. Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook for about 3-4 minutes, or until the vegetables soften.
  4. Stir in the rice, chili powder, cumin, salt, and pepper. Cook for an additional 2-3 minutes, or until the rice is lightly toasted.
  5. Add the drained black beans, diced tomatoes with green chilies, corn kernels, and chicken or beef broth to the skillet. Stir everything together.
  6. Cover the skillet or transfer the mixture to a large oven-safe casserole dish if you started in a regular skillet. Cover the dish with aluminum foil or a lid.
  7. Bake in the preheated oven for about 30-35 minutes, or until the rice is tender and the liquid is absorbed. Cooking times may vary, so check it occasionally.
  8. Remove the casserole from the oven and sprinkle the shredded cheese over the top. Return it to the oven, uncovered, for an additional 5-10 minutes or until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro and sliced green onions if desired.
  10. Serve the Mexican rice casserole hot, with optional toppings like sour cream and salsa.
