Zucchini Patties

Zucchini patties are a delicious and healthy dish made from grated zucchini, herbs, and other seasonings. They’re typically pan-fried until golden brown and served as a side dish or appetizer. Here’s a basic recipe for zucchini patties:

Ingredients:

  • 2 medium-sized zucchinis, grated (about 2 cups)
  • 1 teaspoon salt
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1/4 cup fresh herbs (such as parsley, dill, or cilantro), finely chopped
  • 2 large eggs, beaten
  • 1/4 teaspoon black pepper
  • Olive oil, for frying

Instructions:

  1. Start by grating the zucchinis. Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 10-15 minutes. This will help draw out excess moisture from the zucchini. Afterward, squeeze the zucchini with your hands or use a clean kitchen towel to remove as much liquid as possible.
  2. In a mixing bowl, combine the grated zucchini, breadcrumbs, grated Parmesan cheese (if using), minced garlic, chopped green onions, and fresh herbs.
  3. Add the beaten eggs to the mixture and season with black pepper. Stir everything together until well combined.
  4. Heat a skillet or frying pan over medium-high heat and add enough olive oil to coat the bottom.
  5. While the oil is heating, form the zucchini mixture into patties. You can make them any size you prefer, but smaller patties are easier to manage.
  6. Carefully place the zucchini patties in the hot oil and cook for about 3-4 minutes on each side or until they are golden brown and crispy. You may need to work in batches depending on the size of your pan.
  7. Once cooked, transfer the zucchini patties to a plate lined with paper towels to absorb any excess oil.
  8. Serve the zucchini patties hot, with a dipping sauce like tzatziki, yogurt, or sour cream if desired.

Zucchini patties are a versatile dish, and you can customize them by adding other ingredients like feta cheese, chopped bell peppers, or red pepper flakes for a bit of heat. They make a great side dish, appetizer, or even a vegetarian burger patty when served on a bun with your favorite condiments and toppings. Enjoy!
