Zucchini fritters

Zucchini fritters are a delicious and easy-to-make dish that’s perfect for using up fresh zucchini. Here’s a simple recipe for zucchini fritters:

Ingredients:

  • 2 medium zucchinis, grated
  • 1 small onion, finely chopped (optional)
  • 1/2 cup all-purpose flour (you can use whole wheat or gluten-free flour if preferred)
  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)
  • 1 egg
  • 1/4 teaspoon garlic powder (optional)
  • Salt and pepper, to taste
  • Olive oil or vegetable oil for frying

Instructions:

  1. Prepare the zucchini: Grate the zucchinis using a coarse grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out the excess moisture. This step helps prevent the fritters from being soggy.
  2. Mix the ingredients: In a large bowl, combine the grated zucchini, chopped onion (if using), flour, Parmesan cheese, egg, garlic powder, salt, and pepper. Stir everything together until well mixed. The mixture should hold together but not be too thick.
  3. Fry the fritters: Heat a tablespoon of oil in a large skillet over medium heat. Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture and drop it into the pan. Flatten it gently with the back of the spoon to form a small patty. Cook for about 2-3 minutes per side, or until golden brown and crispy. Repeat with the remaining mixture, adding more oil to the pan as needed.
  4. Drain and serve: Once the fritters are cooked, place them on a paper towel-lined plate to drain any excess oil. Serve hot with a dollop of sour cream, Greek yogurt, or your favorite dipping sauce.

Tips:

  • You can add herbs like dill, parsley, or chives for added flavor.
  • For a healthier version, you can bake the fritters in the oven at 400°F (200°C) on a greased baking sheet for about 20-25 minutes, flipping halfway through.
  • For a gluten-free version, substitute the flour with rice flour or a gluten-free flour blend.
