Ingredients:

For the Fritters:

  • 2 medium zucchinis, grated
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup all-purpose flour (or chickpea flour for a gluten-free option)
  • 2 large eggs
  • 2 tablespoons chopped fresh parsley (optional)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for frying)

For the Garlic Tzatziki:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated (squeeze out excess water)
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

For the Fritters:

  1. Prepare the Zucchini: Grate the zucchini using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is crucial to avoid soggy fritters.
  2. Combine the Ingredients: In a large mixing bowl, combine the grated zucchini, chopped spinach, crumbled feta cheese, flour, eggs, parsley (if using), oregano, salt, and pepper. Stir until everything is evenly combined.
  3. Fry the Fritters: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Scoop about 1-2 tablespoons of the mixture and form small patties. Fry them in batches, pressing them slightly to form even fritters. Cook each side for about 2-3 minutes or until golden brown and crispy.
  4. Drain: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil.

For the Garlic Tzatziki:

  1. Prepare the Tzatziki: In a small bowl, combine the Greek yogurt, grated cucumber (after squeezing out excess water), lemon juice, minced garlic, dill, salt, and pepper. Stir until well mixed.
  2. Finish: Drizzle the olive oil over the top and give it a final stir.

Serve:

  • Serve the crispy fritters warm, with a generous side of garlic tzatziki for dipping. You can also garnish with extra fresh herbs if desired.
