zucchini and oatmeal pizza

Here’s a delicious and unique recipe for Zucchini and Oatmeal Pizza that combines the healthiness of zucchini and oats with the flavors of a traditional pizza!

Ingredients:

For the crust:

  • 1 cup rolled oats (blended into flour or use oat flour)

  • 1 medium zucchini, grated

  • 1/4 cup almond flour (or more oat flour)

  • 1 egg

  • 1/4 cup grated Parmesan cheese (optional)

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp olive oil

  • 1 tsp baking powder

For the toppings:

  • 1/2 cup tomato sauce or pizza sauce

  • 1 cup shredded mozzarella cheese

  • 1/4 cup thinly sliced red onion

  • 1/4 cup sliced bell peppers (any color)

  • 1/4 cup black olives (optional)

  • 1/4 cup fresh basil (optional)

  • Additional toppings of your choice (like mushrooms, spinach, etc.)

Instructions:

  1. Prepare the crust:

    • Preheat your oven to 400°F (200°C).

    • In a blender or food processor, blend the rolled oats into a flour-like consistency. This will create your oat flour.

    • In a large bowl, combine the oat flour, grated zucchini (squeeze out excess moisture), almond flour, egg, Parmesan cheese, garlic powder, salt, pepper, olive oil, and baking powder.

    • Mix everything together until a dough forms. If it’s too sticky, add a little more oat flour until you get a dough consistency.

  2. Form the crust:

    • Line a baking sheet with parchment paper and lightly grease it with a little olive oil or cooking spray.

    • Place the dough on the parchment paper and flatten it into your desired pizza shape (round or rectangular). Make sure it’s about 1/4 inch thick.

  3. Bake the crust:

    • Bake the crust for 15-18 minutes or until golden brown and firm.

  4. Add toppings:

    • Remove the crust from the oven and spread a thin layer of tomato sauce over it.

    • Sprinkle the mozzarella cheese evenly over the sauce, and then add your other toppings like red onions, bell peppers, olives, and any other toppings you prefer.

  5. Final bake:

    • Place the pizza back in the oven for an additional 7-10 minutes, or until the cheese is melted and bubbly.

  6. Garnish and serve:

    • Once out of the oven, you can add fresh basil on top or any extra toppings you like.

    • Slice, serve, and enjoy your zucchini and oatmeal pizza!
