Zucchini and Bacon Slice Recipe

Ingredients:

  • 2 zucchinis, grated

  • 6 slices of bacon (diced)

  • 1 onion, finely chopped

  • 1 clove garlic, minced

  • 1 cup self-raising flour

  • 1 cup grated cheese (cheddar works well)

  • 4 large eggs

  • 1/2 cup milk

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 1 teaspoon dried mixed herbs (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F) and grease or line a baking dish (about 9×9 inches or 23×23 cm) with baking paper.

  2. Prepare the Zucchini: Grate the zucchinis and place them in a clean tea towel or paper towel to squeeze out excess moisture.

  3. Cook the Bacon: Heat the olive oil in a frying pan over medium heat. Add the diced bacon and cook until crispy, about 5–7 minutes. Remove the bacon from the pan and set it aside. If you like, you can cook the onion and garlic in the rendered bacon fat for extra flavor.

  4. Mix the Wet Ingredients: In a large bowl, whisk the eggs and milk together until smooth. Add in the grated cheese, salt, pepper, and mixed herbs (if using).

  5. Add the Dry Ingredients: Stir in the self-raising flour until the mixture is well combined. Fold in the grated zucchini, cooked bacon, onion, and garlic.

  6. Bake: Pour the mixture into the prepared baking dish. Use a spatula to smooth the top and evenly distribute the ingredients.

  7. Bake for 35-40 minutes: Bake the slice in the preheated oven for about 35–40 minutes, or until the top is golden brown, and a toothpick inserted into the center comes out clean.

  8. Serve: Allow the slice to cool for a few minutes before cutting into squares or slices. Serve warm or at room temperature.

Tips:

  • You can substitute the bacon with ham or chicken for a variation.

  • Adding some fresh herbs like parsley or chives can brighten up the flavor.

  • For a bit of heat, add some chili flakes or diced fresh chili.
