Here’s a fresh and flavorful recipe for Zesty Lime Shrimp and Avocado Salad – perfect for a light lunch or a quick dinner. It’s packed with protein, healthy fats, and bright citrusy flavors.


🥗 Zesty Lime Shrimp and Avocado Salad

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined (use cooked or cook raw shrimp in advance)

  • 1 large avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 cucumber, diced (optional for crunch)

  • 1 jalapeño, minced (optional for heat)

  • Zest and juice of 2 limes

  • 2 tbsp olive oil

  • Salt and pepper, to taste


Instructions:

  1. Cook shrimp (if needed):

    • Boil, grill, or sauté shrimp until pink and opaque (about 2–3 minutes per side). Let cool slightly.

  2. Make the dressing:

    • In a small bowl, whisk together lime zest, lime juice, olive oil, salt, and pepper.

  3. Assemble the salad:

    • In a large bowl, combine shrimp, avocado, cherry tomatoes, red onion, cucumber (if using), jalapeño, and cilantro.

  4. Toss and serve:

    • Pour dressing over the salad and gently toss to combine.

    • Chill for 10–15 minutes (optional) or serve immediately.


Tips:

  • Add some mixed greens or butter lettuce to make it more of a leafy salad.

  • Great with tortilla chips or served in lettuce cups.

  • Squeeze in some orange juice for a sweeter citrusy twist.
