🍋 Zesty Alfredo with Salmon and Shrimp

Ingredients:

Seafood:

  • 1 salmon fillet (6–8 oz), skin removed and cut into chunks

  • 1/2 lb shrimp (peeled and deveined)

  • Salt & pepper

  • 1 tbsp olive oil

  • 1 tbsp butter

Alfredo Sauce:

  • 2 tbsp butter

  • 4 cloves garlic, minced

  • 1 cup heavy cream

  • 1 cup freshly grated Parmesan cheese

  • Zest of 1 lemon

  • Juice of 1/2 lemon

  • 1/2 tsp red pepper flakes (adjust to taste)

  • Salt & black pepper, to taste

Pasta:

  • 8 oz fettuccine or linguine

  • Salted water for boiling

Optional Garnishes:

  • Fresh parsley, chopped

  • Extra lemon zest or wedges

  • More Parmesan


Instructions:

  1. Cook the Pasta:

    • Bring salted water to a boil, cook pasta according to package directions. Reserve about 1/2 cup of pasta water before draining.

  2. Sear the Seafood:

    • Season salmon and shrimp with salt and pepper.

    • In a large skillet over medium-high, heat olive oil and butter.

    • Cook the salmon until golden and just cooked through, about 2–3 minutes per side. Remove and set aside.

    • In the same skillet, cook the shrimp until pink and opaque, about 2 minutes per side. Set aside with the salmon.

  3. Make the Zesty Alfredo:

    • Lower the heat to medium. Add butter and garlic to the same pan, sauté until fragrant (1 minute).

    • Pour in cream, stir and bring to a gentle simmer.

    • Add lemon zest, lemon juice, red pepper flakes, salt, and pepper.

    • Stir in Parmesan cheese and whisk until smooth and creamy. Adjust consistency with a bit of pasta water if needed.

  4. Bring it All Together:

    • Toss drained pasta in the sauce.

    • Gently fold in the salmon and shrimp.

    • Let it all simmer together for 1–2 minutes to warm through.

  5. Serve:

    • Plate it up and sprinkle with fresh parsley, extra lemon zest, and more Parmesan if you’re feelin’ fancy.
