Sure, here’s a simple recipe for yeast-free cassava bread:

Ingredients:

  • 2 cups cassava flour
  • 1/4 cup coconut flour
  • 1/4 cup arrowroot powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 2 tablespoons coconut oil (melted)
  • 2 tablespoons honey or maple syrup (optional, for sweetness)
  • 2 eggs

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine cassava flour, coconut flour, arrowroot powder, baking powder, baking soda, and salt. Mix well to combine.
  3. In a separate bowl, whisk together coconut milk, melted coconut oil, honey or maple syrup (if using), and eggs until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms. Make sure there are no lumps.
  5. Pour the batter into the prepared loaf pan and spread it out evenly.
  6. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  7. Remove from the oven and let the bread cool in the pan for about 10 minutes.
  8. Once cooled slightly, transfer the bread to a wire rack to cool completely before slicing.
  9. Serve and enjoy your yeast-free cassava bread!
