Winter salad & Vinaigrette

Certainly! Here’s a simple recipe for a winter salad and vinaigrette:

Winter Salad:

Ingredients:

  • Mixed winter greens (such as kale, spinach, arugula)
  • Sliced radicchio
  • Sliced fennel
  • Sliced apple or pear
  • Pomegranate seeds
  • Toasted walnuts or pecans
  • Crumbled feta or goat cheese (optional)

Instructions:

  1. Wash and dry the greens thoroughly, then tear them into bite-sized pieces.
  2. Slice the radicchio and fennel thinly.
  3. Core and slice the apple or pear.
  4. In a large bowl, toss together the greens, radicchio, fennel, apple or pear slices, pomegranate seeds, and toasted nuts.
  5. If desired, sprinkle crumbled feta or goat cheese on top.

Vinaigrette:

Ingredients:

  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey (if using) until well combined.
  2. Season with salt and pepper to taste.
  3. Adjust the ingredients according to your preference, adding more vinegar for acidity, honey for sweetness, or mustard for tanginess.

Assembly:

  1. Drizzle the vinaigrette over the salad just before serving.
  2. Toss the salad gently to coat the ingredients evenly with the vinaigrette.
  3. Serve immediately and enjoy your refreshing winter salad!
