Ingredients:
- 1 cup farro
- 1 bunch kale, stems removed and leaves thinly sliced
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts, toasted
- 1/4 cup crumbled feta cheese (optional)
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey or maple syrup

Instructions:
- Cook the farro according to the package instructions. Once cooked, drain any excess water and set aside to cool.
