Winter Kale and Farro Salad Recipe

Here’s a simple and delicious recipe for Winter Kale and Farro Salad:

Ingredients:

  • 1 cup farro
  • 1 bunch kale, stems removed and leaves thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts, toasted
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Cook the farro according to the package instructions. Once cooked, drain any excess water and set aside to cool.
  2. While the farro is cooking, prepare the kale by removing the tough stems and thinly slicing the leaves. Place the sliced kale in a large bowl.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, honey or maple syrup, salt, and pepper to make the dressing.
  4. Pour the dressing over the kale and massage it into the leaves with your hands for a few minutes. This helps to soften the kale and infuse it with flavor.
  5. Once the farro has cooled, add it to the bowl with the kale, along with the dried cranberries and toasted walnuts. Toss everything together until well combined.
  6. If using, sprinkle the crumbled feta cheese over the top of the salad.
  7. Serve immediately, or refrigerate for later. This salad can be enjoyed on its own as a light meal, or as a side dish alongside grilled chicken or fish.
