Here’s a Warm & Sweet Blackberry Cobbler recipe that’s rich, comforting, and full of juicy blackberry flavor—perfect with a scoop of vanilla ice cream.


🍇 Warm & Sweet Blackberry Cobbler

Ingredients

For the blackberry filling:

  • 4 cups fresh or frozen blackberries (if frozen, no need to thaw)

  • 3/4 cup granulated sugar

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch

  • 1 tsp vanilla extract

  • 1/4 tsp ground cinnamon (optional)

For the cobbler topping:

  • 1 cup all-purpose flour

  • 1/4 cup granulated sugar

  • 1/4 cup brown sugar

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 6 tbsp unsalted butter, chilled and cut into small cubes

  • 1/4 cup boiling water (or cold milk for a richer topping)

Optional topping:

  • 1 tbsp sugar + 1/2 tsp cinnamon (for sprinkling before baking)


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Prepare the blackberry filling:

    • In a bowl, gently mix blackberries, sugar, lemon juice, cornstarch, vanilla, and cinnamon (if using).

    • Pour the mixture into a greased 8×8-inch baking dish or similar.

  3. Make the cobbler topping:

    • In another bowl, whisk together flour, sugars, baking powder, and salt.

    • Cut in the cold butter using a pastry cutter or fingers until it resembles coarse crumbs.

    • Stir in boiling water (or milk) until just combined into a thick batter.

  4. Assemble the cobbler:

    • Drop spoonfuls of the batter over the blackberry mixture. It won’t cover completely—some bubbling fruit should peek through.

    • Optionally, sprinkle with the cinnamon sugar topping for extra crunch and sweetness.

  5. Bake:

    • Bake for 35–45 minutes, or until the topping is golden brown and the filling is bubbling at the edges.

  6. Cool slightly and serve warm.

    • Top with vanilla ice cream or whipped cream for a dreamy finish.
