Vintage Oven-Baked Peach Cobbler

Ingredients

For the filling:

  • 6 cups fresh peaches, sliced (or 2 cans of sliced peaches, drained)
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional)

For the topping:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Filling: In a large bowl, combine the sliced peaches, sugar, flour, cinnamon, vanilla extract, and lemon juice (if using). Mix gently until the peaches are well coated. Pour this mixture into a greased 9×13-inch baking dish.
  3. Make the Topping: In another bowl, whisk together the flour, sugar, baking powder, and salt. Gradually add the milk, stirring until just combined. Stir in the melted butter until well incorporated.
  4. Assemble the Cobbler: Pour the topping mixture evenly over the peach filling. Do not stir; the topping will rise as it bakes.
  5. Bake: Bake in the preheated oven for about 45-50 minutes, or until the topping is golden brown and a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Allow the cobbler to cool slightly before serving. Enjoy it warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream!
