Veggie Cream Cheese

Here’s a simple recipe for Veggie Cream Cheese:

Ingredients:

  • 8 oz (1 package) cream cheese, softened
  • 1/2 cup sour cream (optional, for extra creaminess)
  • 1/4 cup finely chopped cucumber (seeds removed)
  • 1/4 cup finely chopped red bell pepper
  • 2 tablespoons finely chopped green onion (or chives)
  • 2 tablespoons finely chopped carrots
  • 1 tablespoon fresh parsley (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder (optional)

Instructions:

  1. Prepare the Veggies:
    • Finely chop the cucumber, red bell pepper, green onion (or chives), carrots, and parsley (if using). You can use a food processor for convenience.
  2. Mix Cream Cheese and Sour Cream:
    • In a mixing bowl, combine the softened cream cheese and sour cream (if using). Use a hand mixer or whisk to blend them together until smooth and creamy.
  3. Add Vegetables:
    • Stir in the chopped vegetables (cucumber, bell pepper, green onion, carrots, and parsley). Mix until everything is evenly distributed.
  4. Season:
    • Add lemon juice, garlic powder (if using), salt, and pepper to taste. Stir well to combine.
  5. Chill:
    • Cover the veggie cream cheese and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  6. Serve:
    • Serve as a spread for bagels, toast, crackers, or as a dip for veggies.
