Here’s a refreshing recipe for a Vegetable Salad with Garlic, Yogurt Dressing, and Zucchini:

Ingredients:

For the Salad:

  • 1 medium zucchini, thinly sliced
  • 1 medium cucumber, sliced
  • 1 medium carrot, julienned or thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (any color), thinly sliced
  • 1/2 red onion, thinly sliced
  • Fresh parsley or mint leaves, chopped (for garnish)

For the Garlic Yogurt Dressing:

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 clove garlic, minced (adjust based on preference)
  • 1 tablespoon lemon juice
  • 1 teaspoon honey (optional)
  • Salt and pepper, to taste
  • 1 tablespoon fresh dill (optional, for extra flavor)

Instructions:

  1. Prepare the Salad:
    • Wash and prep all the vegetables: slice the zucchini, cucumber, and bell pepper. Julienne or slice the carrot, and halve the cherry tomatoes. Thinly slice the red onion.
    • Toss all the veggies together in a large bowl.
  2. Make the Garlic Yogurt Dressing:
    • In a small bowl, whisk together the Greek yogurt, olive oil, minced garlic, lemon juice, and honey (if using).
    • Season the dressing with salt and pepper to taste. For extra flavor, you can add fresh dill or other herbs of your choice.
  3. Combine and Serve:
    • Drizzle the garlic yogurt dressing over the prepared vegetables.
    • Gently toss to coat all the ingredients evenly.
    • Garnish with fresh chopped parsley or mint.
  4. Optional: Let the salad sit in the fridge for 10-15 minutes to allow the flavors to meld together.

Tips:

  • Feel free to add other vegetables like lettuce, arugula, or even avocado slices for extra creaminess.
  • If you want a bit of crunch, you can top the salad with some toasted seeds or nuts like sunflower or pumpkin seeds.
