Certainly! Here’s a simple recipe for vegan gluten-free brownies:

Ingredients:

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1 cup coconut sugar or any other vegan sweetener
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips or chunks
  • Optional: Chopped nuts or swirls of nut butter for added texture

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium-sized bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt.
  3. In another bowl, combine the melted coconut oil, coconut sugar, applesauce, and vanilla extract. Mix until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in the dairy-free chocolate chips or chunks. If you like, add chopped nuts or swirls of nut butter for extra flavor and texture.
  6. Pour the batter into the prepared baking pan, spreading it evenly.
  7. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  8. Allow the brownies to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before cutting into squares.
