Vegan apple cider donuts

Sure! Here’s a simple recipe for vegan apple cider donuts:

Ingredients:

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • Cinnamon sugar (for coating)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a donut pan or line a baking sheet with parchment paper.
  2. In a small saucepan, simmer the apple cider over medium heat until it reduces to about 1/4 cup. This concentrates the flavor. Let it cool slightly.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, mix together the reduced apple cider, applesauce, vegetable oil, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  6. Spoon the batter into the prepared donut pan or form donut shapes on the baking sheet using a piping bag or a spoon.
  7. Bake in the preheated oven for 10-12 minutes, or until the donuts are firm to the touch and a toothpick inserted into the center comes out clean.
  8. Let the donuts cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
  9. Once the donuts are cool enough to handle, roll them in cinnamon sugar to coat.
  10. Enjoy your delicious vegan apple cider donuts!

These donuts are best enjoyed fresh but can be stored in an airtight container at room temperature for a couple of days.
