Vanilla Sponge Cake

Here’s a simple recipe for a light and fluffy Vanilla Sponge Cake:

Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 4 large eggs
  • 1/4 cup (60g) unsalted butter, melted
  • 1/4 cup (60ml) milk
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • A pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Whisk eggs and sugar: In a large bowl, beat the eggs and sugar together using an electric mixer on medium-high speed until the mixture becomes pale, thick, and fluffy. This should take about 5-7 minutes.
  3. Add the wet ingredients: Stir in the melted butter, milk, and vanilla extract. Mix until well combined.
  4. Sift the dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt.
  5. Fold in the flour: Gradually fold the dry ingredients into the egg mixture. Use a spatula to gently incorporate the flour without deflating the batter.
  6. Pour the batter into the pan: Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
  7. Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Tips:

  • For an extra fluffy sponge cake, make sure not to over-mix the batter after adding the flour.
  • You can add a bit of lemon zest or a splash of almond extract to flavor the cake if desired.
