Ukrainian Red Borscht Soup Recipe

Certainly! Ukrainian Red Borscht is a delicious and vibrant soup made with beets, vegetables, and sometimes meat. Here’s a simple recipe for you:

Ingredients:

  • 2 medium-sized beets, peeled and grated
  • 1 large onion, finely chopped
  • 2 medium-sized carrots, peeled and grated
  • 1 medium-sized potato, peeled and diced
  • 1/2 small head of cabbage, shredded
  • 1 can (14 oz) of diced tomatoes
  • 1/4 cup tomato paste
  • 1 bay leaf
  • 4 cups beef or vegetable broth
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 tablespoon sugar (optional, to balance the acidity)
  • Sour cream and fresh dill for serving

Instructions:

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
  2. Add grated beets and carrots to the pot and continue to sauté for about 5-7 minutes until the vegetables are softened.
  3. Add the diced potatoes, shredded cabbage, diced tomatoes (with their juice), tomato paste, bay leaf, and minced garlic. Stir well to combine.
  4. Pour in the broth, bring the mixture to a boil, then reduce the heat to low and simmer for about 20-25 minutes or until the vegetables are tender.
  5. Season the soup with salt, pepper, and sugar (if using) to taste. Adjust the seasoning as needed.
  6. Remove the bay leaf and discard it.
  7. Let the soup rest for a few minutes before serving. Borscht is often even tastier when reheated the next day.
  8. Serve the Ukrainian Red Borscht hot, garnished with a dollop of sour cream and fresh dill.
