Certainly! Tuscan Chicken is a delicious and flavorful dish that typically includes ingredients like sun-dried tomatoes, garlic, spinach, and Italian herbs. Here’s a simple recipe for Tuscan Chicken:

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides and cooked through (about 5-7 minutes per side). Remove chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  4. Add cherry tomatoes, sun-dried tomatoes, and spinach to the skillet. Cook until the spinach wilts and the tomatoes soften.
  5. Sprinkle dried oregano, dried basil, and dried thyme over the vegetables. Stir to combine.
  6. Pour in the heavy cream and chicken broth, and bring the mixture to a simmer.
  7. Stir in the Parmesan cheese until melted and the sauce has thickened.
  8. Return the cooked chicken to the skillet and simmer for an additional 2-3 minutes to heat through.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped fresh parsley before serving.
