Tropical Pineapple Paradise Pie

Tropical Pineapple Paradise Pie sounds delicious! Here’s a recipe for you:

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the filling:

  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8 oz) container whipped topping (like Cool Whip)
  • 1 (20 oz) can crushed pineapple, drained well
  • 1 cup shredded coconut
  • 1/2 cup chopped macadamia nuts (optional)

Instructions:

1. Preheat Oven: Preheat your oven to 350°F (175°C).

2. Prepare the Crust: In a medium bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 10 minutes, then remove from oven and let cool completely.

3. Prepare the Filling: In a large bowl, beat the softened cream cheese until smooth. Add in the powdered sugar and vanilla extract, and continue to beat until well combined and creamy. Fold in the whipped topping until fully incorporated. Gently stir in the crushed pineapple, shredded coconut, and chopped macadamia nuts (if using) until evenly distributed.

4. Assemble the Pie: Spoon the filling into the cooled graham cracker crust, spreading it out evenly with a spatula.

5. Chill: Place the pie in the refrigerator and chill for at least 4 hours, or until set.

6. Serve: Once chilled and set, slice the pie into wedges and serve cold. You can optionally garnish with additional shredded coconut or chopped macadamia nuts on top.
