Huevos Rancheros is a classic traditional Mexican breakfast dish that features fried eggs served on lightly fried corn tortillas topped with a savory tomato-chili sauce. It’s hearty, flavorful, and relatively simple to prepare. Here’s an authentic-style recipe:

🧂 Ingredients:

For the Ranchero Sauce:

  • 2 ripe tomatoes (or 1 cup canned crushed tomatoes)

  • 1 small white onion, chopped

  • 1–2 cloves garlic

  • 1 jalapeño or serrano chili (seeded if less heat is desired)

  • 1 tbsp oil (vegetable or olive)

  • Salt to taste

  • Optional: a handful of chopped fresh cilantro

For the Huevos Rancheros:

  • 4 small corn tortillas

  • 4 eggs

  • 2–3 tbsp oil (for frying)

  • Refried beans (optional but traditional)

  • Crumbled queso fresco or cotija cheese (optional)

  • Avocado slices (optional)

  • Fresh cilantro (optional garnish)


🔪 Instructions:

1. Make the Ranchero Sauce:

  1. In a blender, combine tomatoes, onion, garlic, and chili. Blend until smooth.

  2. Heat 1 tbsp oil in a skillet over medium heat. Pour in the blended sauce and cook for 8–10 minutes, stirring occasionally, until slightly thickened. Season with salt to taste.

  3. Optional: Stir in chopped cilantro at the end.

2. Prepare the Tortillas:

  • Heat 1–2 tbsp oil in a skillet over medium-high heat.

  • Lightly fry each tortilla for 30–60 seconds per side, just until golden but still pliable.

  • Drain on paper towels.

3. Cook the Eggs:

  • In the same skillet, add a little more oil if needed.

  • Fry the eggs sunny-side up (or to your preferred doneness), seasoning lightly with salt.

4. Assemble the Huevos Rancheros:

  • Spread a spoonful of refried beans on each tortilla (if using).

  • Top each with a fried egg.

  • Spoon warm ranchero sauce over the egg.

  • Garnish with queso fresco, avocado slices, and cilantro if desired.
