Taco Stuffed Shells

Certainly! Taco stuffed shells are a delicious and creative twist on traditional stuffed shells. Here’s a simple recipe for you:

Ingredients:

  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup water
  • 1 package jumbo pasta shells
  • 1 can (15 ounces) refried beans
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream (optional)
  • Chopped green onions, olives, or cilantro for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Cook the jumbo pasta shells according to the package instructions. Drain and set aside.
  3. In a large skillet, brown the ground beef or turkey over medium heat. Drain any excess fat.
  4. Add the taco seasoning and water to the skillet with the meat. Mix well and let it simmer until the mixture thickens.
  5. In a separate bowl, mix the refried beans and salsa together.
  6. Spread a thin layer of the bean and salsa mixture in the bottom of a baking dish.
  7. Take each cooked pasta shell and fill it with a spoonful of the meat mixture, placing it into the baking dish.
  8. Once all shells are filled, spread any remaining meat mixture over the top.
  9. Sprinkle shredded cheddar cheese over the shells.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
  11. Optionally, garnish with chopped green onions, olives, or cilantro.
  12. Serve hot with a dollop of sour cream on top if desired.
