Taco Loaded Baked Potatoes are the perfect fusion of two comfort foods: baked potatoes and tacos! They’re hearty, customizable, and great for a family dinner or a party bar. Here’s a simple and delicious recipe to make them:


🌮 Taco Loaded Baked Potatoes Recipe

🥔 Ingredients:

For the Potatoes:

  • 4 large russet potatoes, scrubbed clean

  • Olive oil

  • Salt

For the Taco Filling:

  • 1 lb ground beef or ground turkey

  • 1 small onion, diced

  • 2–3 cloves garlic, minced

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1/3 cup water

Toppings (optional but recommended):

  • Shredded cheddar or Mexican blend cheese

  • Sour cream or Greek yogurt

  • Diced tomatoes

  • Shredded lettuce

  • Jalapeño slices

  • Sliced black olives

  • Green onions

  • Fresh cilantro

  • Salsa or hot sauce

  • Guacamole or sliced avocado


🔥 Instructions:

  1. Bake the Potatoes:

    • Preheat oven to 425°F (220°C).

    • Rub potatoes with olive oil and sprinkle with salt.

    • Prick each potato with a fork a few times.

    • Bake directly on the oven rack (or a baking sheet) for 45–60 minutes, or until fork-tender and crispy-skinned.

  2. Prepare the Taco Meat:

    • In a skillet over medium heat, cook diced onion in a bit of oil until softened.

    • Add ground meat and cook until browned. Drain excess fat.

    • Add minced garlic, taco seasoning, and water. Stir and simmer until thickened (about 5 minutes).

  3. Assemble:

    • Cut open each baked potato and fluff the insides with a fork.

    • Spoon taco meat into each potato.

    • Top with cheese (so it melts), then load up with your favorite toppings.
