Here’s a mouthwatering Sweet & Spicy Korean BBQ Meatloaf recipe that blends the comfort of classic meatloaf with bold Korean flavors:


🍖 Sweet & Spicy Korean BBQ Meatloaf

🔹 Ingredients

For the Meatloaf:
  • 1 ½ lbs ground beef (80/20 or 85/15)

  • ½ lb ground pork (optional but adds juiciness)

  • 1 cup panko breadcrumbs

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 2 eggs

  • ¼ cup milk

  • 2 tablespoons gochujang (Korean chili paste)

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 1 tablespoon brown sugar

  • ½ teaspoon ground ginger

  • Salt and pepper to taste

  • 2 green onions, thinly sliced (plus extra for garnish)

For the Glaze:
  • 2 tablespoons gochujang

  • 2 tablespoons ketchup

  • 1 tablespoon honey or brown sugar

  • 1 tablespoon soy sauce

  • 1 teaspoon rice vinegar or apple cider vinegar

  • ½ teaspoon sesame oil


🧑‍🍳 Instructions

  1. Preheat Oven to 375°F (190°C).

  2. Mix the Meatloaf: In a large bowl, combine all the meatloaf ingredients. Use your hands or a large spoon to mix until just combined—don’t overmix or it’ll get tough.

  3. Shape & Bake: Transfer the mixture to a parchment-lined baking sheet or loaf pan. Shape into a loaf (about 9×5 inches). Bake for 30 minutes uncovered.

  4. Make the Glaze: While it’s baking, whisk together all glaze ingredients in a small bowl.

  5. Glaze & Finish Baking: After 30 minutes, spread the glaze evenly over the top of the meatloaf. Return to the oven and bake for another 15–20 minutes, or until internal temp hits 160°F (71°C).

  6. Rest & Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with sliced green onions and sesame seeds if you’d like.


🍚 Serving Suggestions:

  • Serve with steamed rice or garlic mashed potatoes.

  • Add a side of kimchi or pickled cucumbers.

  • A light Asian slaw with sesame dressing is 💯 with it.

Want a spicy kick? Add a drizzle of sriracha or more gochujang on top.
