Here’s a simple and super soft Vanilla Breakfast Cake recipe that’s perfect for a cozy morning treat. It’s fluffy, lightly sweet, and can be enjoyed plain or topped with fruit, yogurt, or a dusting of powdered sugar.


🍰 Super Soft Vanilla Breakfast Cake

Ingredients:

  • 1 ½ cups (190g) all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup (115g) unsalted butter, softened

  • ⅔ cup (135g) granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • ¾ cup (180ml) buttermilk or plain yogurt (for extra softness)

  • Optional: 2 tbsp milk (if batter is too thick)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.

  2. Whisk dry ingredients: In a bowl, combine flour, baking powder, baking soda, and salt.

  3. Cream butter and sugar: In a separate large bowl, beat softened butter and sugar together until light and fluffy (about 2–3 minutes).

  4. Add eggs and vanilla: Beat in eggs one at a time, then add vanilla.

  5. Mix in buttermilk and dry ingredients: Alternately add the flour mixture and buttermilk to the butter mixture in three parts, beginning and ending with flour. Mix until just combined—don’t overmix!

  6. Bake: Pour the batter into the prepared pan. Smooth the top and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool and serve: Let cool in the pan for 10 minutes, then transfer to a rack. Serve warm or at room temperature.


🍓 Optional Toppings:

  • Sliced berries + whipped cream

  • Honey or maple drizzle

  • A spoonful of Greek yogurt

  • Powdered sugar dusting
