Super moist Banana Bread

Here’s a super moist banana bread recipe for you!

Ingredients:

  • 2-3 ripe bananas (the riper, the better!)
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar (you can use 1/2 cup brown sugar for a richer flavor)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup buttermilk (or regular milk if you don’t have buttermilk)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional, but adds a nice touch)
  • 1/2 cup sour cream (for extra moisture)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.

  2. Mash the bananas in a bowl. Make sure they’re ripe and mashed until smooth with a few lumps.

  3. In a mixing bowl, cream the butter and sugar together until light and fluffy. Add in the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).

  5. Add the mashed bananas to the butter mixture, then stir in the sour cream and buttermilk. Slowly mix in the dry ingredients until just combined. Be careful not to over-mix.

  6. Pour the batter into your prepared loaf pan. Smooth the top with a spatula.

  7. Bake for 60-70 minutes, or until a toothpick comes out clean when inserted into the center. If the top is browning too quickly, you can cover it with foil for the last 15 minutes of baking.

  8. Let the banana bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Enjoy your super moist banana bread! You can serve it as is, or with a spread of butter, peanut butter, or Nutella for an extra treat.
