Zuppa Toscana is a hearty and flavorful Italian soup that typically features sausage, potatoes, kale, and a creamy broth. Here’s a super-delicious Zuppa Toscana recipe for you:

Ingredients:

  • 1 pound Italian sausage (spicy or mild), casings removed
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups water
  • 4 medium-sized potatoes, peeled and sliced into thin rounds
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper flakes (optional, for extra heat)
  • 1 bunch kale, stems removed and leaves chopped
  • 1 cup heavy cream
  • Grated Parmesan cheese, for serving

Instructions:

  1. In a large soup pot or Dutch oven, brown the Italian sausage over medium heat, breaking it into crumbles as it cooks. Once browned, remove any excess fat.
  2. Add chopped onions to the pot and sauté until they become translucent, about 3-4 minutes. Add minced garlic and continue to cook for an additional 1-2 minutes until fragrant.
  3. Pour in the chicken broth and water, scraping the bottom of the pot to release any flavorful bits. Bring the mixture to a simmer.
  4. Add the sliced potatoes, salt, black pepper, and crushed red pepper flakes (if using). Cook until the potatoes are tender, about 15-20 minutes.
  5. Stir in the chopped kale and cook for an additional 5 minutes until the kale is wilted and tender.
  6. Reduce the heat to low and pour in the heavy cream. Stir the soup until well combined and heated through. Taste and adjust the seasoning if necessary.
  7. Allow the soup to simmer for an additional 5-10 minutes, allowing the flavors to meld.
  8. Serve the Zuppa Toscana hot, garnished with grated Parmesan cheese on top.
