Here’s a Strawberry Lemonade Buttermilk Cake recipe — moist, tangy, and bursting with fruity flavor. Perfect for summer parties or tea-time treats!


🍓 Strawberry Lemonade Buttermilk Cake

Ingredients

For the Cake:

  • 2 cups all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tbsp lemon zest

  • 2 tbsp fresh lemon juice

  • 1 tsp vanilla extract

  • ¾ cup buttermilk

  • 1 ¼ cups chopped fresh strawberries (lightly tossed in 1 tsp flour)

For the Strawberry Lemon Glaze:

  • ½ cup powdered sugar

  • 1 tbsp fresh lemon juice

  • 1 tbsp mashed strawberries (strained for fewer seeds, optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or 8×8-inch square cake pan (or line with parchment).

  2. Mix dry ingredients:
    In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  3. Cream butter & sugar:
    In a large bowl, beat the butter and sugar until light and fluffy (about 3–4 minutes).

  4. Add eggs and flavoring:
    Beat in eggs one at a time. Stir in lemon zest, lemon juice, and vanilla extract.

  5. Combine wet and dry:
    Alternate adding the dry ingredients and buttermilk to the batter in 2-3 batches. Mix until just combined.

  6. Fold in strawberries:
    Gently fold in the floured strawberries (this helps prevent sinking).

  7. Bake:
    Pour batter into the prepared pan and smooth the top.
    Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack.

  8. Make the glaze:
    In a small bowl, whisk together powdered sugar, lemon juice, and mashed strawberries until smooth. Add more sugar for a thicker glaze if needed.

  9. Glaze the cake:
    Once the cake is mostly cool, drizzle the glaze over the top.
