Strawberry Eclair Cake

Here’s a delicious Strawberry Éclair Cake recipe — no baking required! It’s creamy, fruity, and perfect for summer gatherings.


🍓 Strawberry Éclair Cake

Ingredients:

For the cake:

  • 1 box (14.4 oz) graham crackers (plain or honey)

  • 2 cups sliced fresh strawberries

  • 2 packages (3.4 oz each) instant vanilla pudding

  • 2 ½ cups cold milk

  • 1 tub (8 oz) Cool Whip (or whipped topping)

For the topping:

  • 1 cup strawberries, diced (optional, for garnish)

  • 1 can (16 oz) strawberry frosting
    or use homemade strawberry glaze or whipped cream with mashed berries


Instructions:

  1. Prepare filling:
    In a large bowl, whisk together the pudding mix and milk until thickened. Fold in the Cool Whip until smooth and creamy.

  2. Layer graham crackers:
    In a 9×13-inch dish, place a single layer of graham crackers to cover the bottom.

  3. Layer filling and strawberries:
    Spread half of the pudding mixture over the crackers. Add a layer of sliced strawberries.

  4. Repeat:
    Add another layer of graham crackers, then the remaining pudding mix and more sliced strawberries.

  5. Top layer:
    Add a final layer of graham crackers. Gently spread the strawberry frosting over the top (soften it in the microwave for 15-20 seconds to make it easier to spread).

  6. Chill:
    Cover and refrigerate for at least 4 hours (overnight is best) to allow the graham crackers to soften.

  7. Serve:
    Garnish with extra diced strawberries if desired. Slice and enjoy!
