Here’s a delicious Strawberry Crunch Cheesecake Chunks recipe – inspired by strawberry shortcake ice cream bars and creamy cheesecake, all in bite-sized chunks!


🍓 Strawberry Crunch Cheesecake Chunks

✅ Ingredients:

For the Cheesecake Layer:

  • 16 oz (2 packages) cream cheese, softened

  • 1/2 cup granulated sugar

  • 1/2 cup sour cream

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1 tbsp flour (optional, for firmness)

For the Crust:

  • 1 1/2 cups crushed Golden Oreos or graham crackers

  • 5 tbsp melted butter

For the Strawberry Crunch Topping:

  • 1 cup Golden Oreos, crushed

  • 1 cup freeze-dried strawberries or strawberry Jello powder

  • 3 tbsp melted butter


🧁 Instructions:

  1. Preheat Oven to 325°F (163°C). Line an 8×8 or 9×9 inch pan with parchment paper for easy lifting.

  2. Make the Crust:

    • Mix crushed Oreos/graham crackers and melted butter.

    • Press into the bottom of the pan and bake for 8–10 minutes. Let cool.

  3. Prepare Cheesecake Layer:

    • Beat cream cheese and sugar until smooth.

    • Add sour cream and vanilla. Mix well.

    • Add eggs one at a time, mixing just until combined. (Add flour if desired for firmer chunks.)

    • Pour over crust.

  4. Bake Cheesecake:

    • Bake for 35–40 minutes until the center is just set.

    • Cool completely, then refrigerate for at least 4 hours or overnight.

  5. Make the Crunch Topping:

    • Crush Golden Oreos and freeze-dried strawberries together. Mix with melted butter until crumbly.

  6. Assemble & Cut into Chunks:

    • Lift the chilled cheesecake out of the pan and cut into chunks.

    • Roll or press each chunk into the strawberry crunch topping, fully coating the sides.
