Strawberry Cream Cake

Certainly! Here’s a delicious recipe for a strawberry cream cake:

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Strawberry Filling:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar

For the Whipped Cream Frosting:

  • 2 cups heavy cream, chilled
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
  2. Prepare the Cake:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
    • Divide the batter evenly between the prepared pans and smooth the tops.
    • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  3. Prepare the Strawberry Filling:
    • In a bowl, combine the sliced strawberries and granulated sugar. Allow them to sit for about 15-20 minutes until the strawberries release their juices.
  4. Make the Whipped Cream Frosting:
    • In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. Assemble the Cake:
    • Once the cakes are completely cooled, place one layer on a serving plate.
    • Spread a layer of whipped cream on top of the first cake layer.
    • Spoon the macerated strawberries over the whipped cream layer.
    • Place the second cake layer on top and cover the entire cake with the remaining whipped cream.
    • Optionally, garnish the top with additional sliced strawberries.
  6. Chill and Serve:
    • Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld and the whipped cream to set.
    • Slice and enjoy your delicious strawberry cream cake!
