Stabilized Whipped Cream

Stabilized whipped cream is regular whipped cream that has been modified to prevent it from deflating or losing its texture over time. Whipped cream tends to lose its volume and become watery after a while, especially if left at room temperature or stored in the refrigerator for an extended period. Stabilizing whipped cream helps it maintain its light and fluffy texture for a longer duration.

There are various methods to stabilize whipped cream, but one common approach involves the use of stabilizing agents. Here’s a simple recipe for stabilized whipped cream:

Ingredients:

  • 1 cup heavy whipping cream (cold)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (optional)
  • 1-2 tablespoons cornstarch or gelatin (stabilizing agent)

Instructions:

  1. Chill equipment: Make sure that the mixing bowl and beaters or whisk attachments are well-chilled. This helps the cream whip up faster.
  2. Prepare stabilizing agent: If using gelatin, dissolve it in a tablespoon of cold water and let it bloom for a few minutes. If using cornstarch, mix it with a small amount of the cold cream to create a smooth paste.
  3. Whip the cream: Pour the cold heavy whipping cream into the chilled bowl. Begin whipping the cream at medium speed until it starts to thicken.
  4. Add sugar and stabilizing agent: Gradually add the powdered sugar and continue whipping. If using vanilla extract, add it at this stage. If using gelatin, heat the bloomed gelatin slightly to liquify it, then drizzle it into the whipping cream. If using cornstarch, add the cream-cornstarch mixture.
  5. Continue whipping: Whip the cream until stiff peaks form. Stiff peaks mean the cream is firm and holds its shape.
  6. Serve or store: Use the stabilized whipped cream immediately, or store it in the refrigerator. It should maintain its texture for a longer period compared to regular whipped cream.

Keep in mind that stabilized whipped cream may have a slightly different texture compared to traditional whipped cream, but it’s a great option when you need the whipped cream to hold up for a longer time.
