Sponge cake with pineapple cream

A sponge cake with pineapple cream is a delightful dessert that combines the light and airy texture of sponge cake with the tropical sweetness of pineapple cream. Here’s a recipe to create this delicious treat:

Sponge Cake:

Ingredients:

  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a mixing bowl, beat the eggs, sugar, and vanilla extract together with an electric mixer on high speed until the mixture is pale, fluffy, and has doubled in volume. This usually takes about 5-7 minutes.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gently fold the dry ingredients into the egg mixture in batches. Use a spatula and be careful not to overmix to retain the lightness of the batter.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake in the preheated oven for about 20-25 minutes or until the cakes are golden brown and a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Pineapple Cream:

Ingredients:

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
  2. Gently fold in the drained crushed pineapple until well combined.

Assembling the Cake:

  1. Place one of the cooled sponge cakes on a serving plate.
  2. Spread a generous layer of the pineapple cream over the top of the cake.
  3. Carefully place the second sponge cake on top of the pineapple cream layer.
  4. Spread the remaining pineapple cream over the top of the second cake layer.
  5. You can garnish the cake with additional pineapple chunks or toasted coconut, if desired.
  6. Refrigerate the cake for at least an hour before serving to allow the flavors to meld and the cream to set.
  7. Slice and serve the delicious sponge cake with pineapple cream.
