Spinach and Feta Chicken Rolls

Here’s a delicious recipe for Spinach and Feta Chicken Rolls. These savory rolls are filled with a flavorful combination of spinach, feta cheese, and herbs, all wrapped in tender chicken breast. It’s a great meal for dinner or special occasions!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (optional for extra binding)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for cooking)
  • 1/2 cup chicken broth (optional for extra moisture)

Instructions:

  1. Preheat oven: Preheat your oven to 375°F (190°C).
  2. Prepare the chicken:
    • Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness (about 1/2 inch thick).
    • Season the chicken with salt, pepper, oregano, and basil on both sides.
  3. Make the filling:
    • In a mixing bowl, combine the chopped spinach, crumbled feta cheese, Parmesan cheese, breadcrumbs (if using), minced garlic, and 1 tablespoon of olive oil. Mix until well combined. Season with a pinch of salt and pepper.
  4. Assemble the rolls:
    • Place an even amount of the spinach and feta mixture in the center of each chicken breast.
    • Roll the chicken breasts tightly, folding in the sides as you roll them up to enclose the filling. Secure with toothpicks or kitchen twine.
  5. Cook the rolls:
    • Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat.
    • Add the chicken rolls to the skillet and cook for 2-3 minutes on each side until the chicken is golden brown.
    • Once browned, carefully add chicken broth to the skillet (optional), and transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Serve:
    • Remove the chicken from the oven and let it rest for a few minutes before removing the toothpicks or twine.
    • Slice the rolls into 1-inch pieces and serve with your favorite side dishes like roasted vegetables, potatoes, or a salad.
