Here’s a delightful recipe for a special fruit pavé, a layered dessert that showcases fresh fruits and a creamy filling. It’s perfect for gatherings or a sweet treat!

Special Fruit Pavé Recipe

Ingredients

For the Base:

  • 200g (7 oz) digestive biscuits or graham crackers
  • 100g (3.5 oz) unsalted butter, melted

For the Cream Layer:

  • 400ml (14 oz) heavy cream
  • 250g (8.8 oz) cream cheese, softened
  • 100g (3.5 oz) powdered sugar
  • 1 tsp vanilla extract
  • Zest of 1 lemon

For the Fruit Layer:

  • 300g (10.5 oz) mixed fresh fruits (such as strawberries, kiwis, blueberries, and mango)
  • 2 tbsp honey or maple syrup (optional)
  • Mint leaves for garnish (optional)

Instructions

  1. Prepare the Base:
    • Preheat the oven to 180°C (350°F) if you want to crisp the base slightly (optional).
    • Crush the digestive biscuits in a food processor or by placing them in a ziplock bag and crushing them with a rolling pin until fine.
    • Mix the crushed biscuits with the melted butter until well combined.
    • Press the mixture into the bottom of a rectangular or square baking dish (about 8×8 inches) to form a solid base. Bake for about 10 minutes if desired, then let it cool.
  2. Make the Cream Layer:
    • In a mixing bowl, beat the heavy cream until soft peaks form.
    • In another bowl, combine the cream cheese, powdered sugar, vanilla extract, and lemon zest. Mix until smooth.
    • Gently fold the whipped cream into the cream cheese mixture until fully combined.
  3. Assemble the Pavé:
    • Spread half of the cream layer over the cooled biscuit base.
    • Arrange a layer of mixed fruits on top of the cream.
    • Add the remaining cream mixture on top of the fruits, smoothing it out evenly.
    • Top with more mixed fruits for decoration.
  4. Chill:
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  5. Serve:
    • Slice the pavé into squares or rectangles.
    • Drizzle with honey or maple syrup if desired and garnish with mint leaves.
