Southwest Beef Casserole

Sure, here’s a recipe for Southwest Beef Casserole:

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional toppings: chopped fresh cilantro, diced avocado, sour cream, salsa

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat, breaking it up with a spoon as it cooks. Once the beef is no longer pink, add the chopped onion, bell peppers, and minced garlic. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the black beans, corn, diced tomatoes with green chilies, cooked rice, chili powder, cumin, salt, and pepper. Let the mixture simmer for another 5 minutes, allowing the flavors to meld together. Taste and adjust seasoning if needed.
  4. Transfer the beef mixture into a greased 9×13 inch baking dish. Spread it out evenly.
  5. Sprinkle the shredded cheddar cheese over the top of the beef mixture.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  7. Remove the foil and bake for an additional 5 minutes to allow the cheese to brown slightly.
  8. Once done, remove the casserole from the oven and let it cool for a few minutes before serving.
  9. Serve the Southwest Beef Casserole hot, garnished with your choice of toppings such as chopped fresh cilantro, diced avocado, sour cream, or salsa.
