SOUTHERN SQUASH CASSEROLE

Sure, here’s a simple recipe for Southern Squash Casserole:

Ingredients:

  • 2 pounds yellow squash, sliced
  • 1/2 cup chopped onion
  • 1/2 cup butter
  • 1 sleeve Ritz crackers, crushed
  • 1 cup shredded cheddar cheese
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the sliced squash and chopped onion in butter over medium heat until tender. This usually takes about 8-10 minutes. Drain any excess liquid.
  3. In a separate bowl, combine the crushed Ritz crackers and shredded cheddar cheese.
  4. In another bowl, mix together the beaten eggs, milk, salt, and black pepper.
  5. Combine the cooked squash and onion mixture with the cracker and cheese mixture. Then add the egg mixture and stir until everything is well combined.
  6. Transfer the mixture to a greased baking dish.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden brown.
  8. Serve hot and enjoy your delicious Southern Squash Casserole!
