Southern salmon croquettes are a classic Southern dish made with canned salmon, breadcrumbs, and various seasonings. They’re typically pan-fried to a golden brown and served with a tasty sauce. Here’s a recipe for you to enjoy:Ingredients:

For the Salmon Croquettes:

  • 2 cans (14.75 ounces each) pink or red salmon, drained and bones removed
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup mayonnaise
  • 1 large egg, beaten
  • 1 cup breadcrumbs (plus extra for coating)
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning (or your favorite seafood seasoning)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

For the Sauce:

  • 1/2 cup mayonnaise
  • 1-2 tablespoons hot sauce (adjust to your preferred level of heat)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions:

For the Salmon Croquettes:

  1. In a large mixing bowl, combine the drained salmon, chopped onion, green bell pepper, and celery.
  2. In a separate small bowl, mix together the mayonnaise, beaten egg, lemon juice, Old Bay seasoning, garlic powder, and black pepper.
  3. Pour the mayonnaise mixture over the salmon and vegetables. Add the breadcrumbs as well. Mix everything together until well combined.
  4. Divide the mixture into equal portions and shape them into patties. You can make them round or oval, depending on your preference. Coat each patty in extra breadcrumbs for a crispy exterior.
  5. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot (around 350°F or 175°C), carefully place the salmon croquettes in the skillet. Cook for about 3-4 minutes on each side, or until they’re golden brown and crispy. Use a spatula to flip them gently.
  6. Remove the croquettes from the skillet and place them on paper towels to drain any excess oil.

For the Sauce:

  1. In a small bowl, mix together the mayonnaise, hot sauce, lemon juice, salt, and pepper to create a spicy mayo sauce.
  2. Serve the salmon croquettes hot with the spicy mayo sauce on the side for dipping.
