Southern Potato Salad

Southern potato salad is a classic dish known for its creamy texture and tangy flavor. Here’s a traditional recipe for Southern-style potato salad:

Ingredients:

  • 2 pounds (about 4 cups) of potatoes (Yukon Gold or Russet work well)
  • 3 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • Salt and pepper to taste
  • Paprika (for garnish, optional)
  • Chopped fresh parsley (for garnish, optional)

Instructions:

  1. Boil the Potatoes: Start by boiling the potatoes. Peel them if you prefer, although leaving the skins on can add extra texture and flavor. Cut the potatoes into 1-inch cubes for even cooking. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce the heat to a simmer. Cook for about 10-15 minutes or until the potatoes are fork-tender but not mushy. Drain and let them cool to room temperature.
  2. Boil the Eggs: While the potatoes are cooking, place the eggs in a saucepan and cover them with water. Bring the water to a boil, then remove the saucepan from the heat, cover, and let the eggs sit in hot water for about 10-12 minutes. Drain the hot water and immediately transfer the eggs to an ice bath to cool. Once cooled, peel and chop the eggs.
  3. Prepare the Dressing: In a small bowl, combine the mayonnaise, yellow mustard, sweet pickle relish, and a pinch of salt and pepper. Mix well to create the dressing.
  4. Combine Ingredients: In a large mixing bowl, combine the cooked and cooled potatoes, chopped eggs, chopped celery, chopped onion, and chopped green bell pepper.
  5. Add the Dressing: Pour the dressing over the potato mixture. Gently fold everything together until the potatoes and other ingredients are evenly coated with the dressing.
  6. Chill and Serve: Cover the bowl and refrigerate the potato salad for at least 2 hours, or overnight for the best flavor. Chilling allows the flavors to meld together. Before serving, garnish with a sprinkle of paprika and chopped fresh parsley if desired.
  7. Adjust Seasoning: Taste the potato salad and adjust the salt, pepper, or other seasonings to your preference.

Southern potato salad is a fantastic side dish for picnics, barbecues, and family gatherings. Enjoy!
