Snickerdoodle Banana Bread

Posted on July 12, 2025

Here’s a delicious Snickerdoodle Banana Bread recipe — soft, moist banana bread swirled with a cinnamon-sugar coating like your favorite cookie!

🍌 Snickerdoodle Banana Bread

Ingredients:

For the Banana Bread:

  • 1 ½ cups mashed ripe bananas (about 3 bananas)

  • ½ cup unsalted butter, melted

  • ¾ cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon

For the Cinnamon-Sugar Topping:

  • ¼ cup granulated sugar

  • 1 tsp cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

  2. Make the batter:
In a large bowl, whisk together mashed bananas, melted butter, sugar, egg, and vanilla.
In another bowl, whisk flour, baking soda, salt, and cinnamon. Add the dry ingredients to the wet and stir until just combined. Don’t overmix.

  3. Make cinnamon-sugar topping:
In a small bowl, mix ¼ cup sugar with 1 tsp cinnamon.

  4. Layer the batter and topping:
Pour half of the batter into the pan. Sprinkle half the cinnamon-sugar over it. Add the remaining batter and sprinkle the rest of the cinnamon-sugar on top.

  5. Bake:
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. If the top is browning too quickly, tent it with foil in the last 15 minutes.

  6. Cool:
Let the bread cool in the pan for 10–15 minutes before transferring to a wire rack.
