Here’s a delicious and well-balanced idea for a Smoked Salmon Breakfast Plate with Fried Eggs & Fresh Veggies:


🧡 Smoked Salmon Breakfast Plate with Fried Eggs & Fresh Veggies

Ingredients:

  • 2 large eggs

  • 2–3 oz smoked salmon

  • ½ avocado, sliced

  • ½ cup cherry tomatoes, halved

  • ½ cucumber, sliced

  • ¼ red onion, thinly sliced

  • Fresh arugula or baby spinach

  • Olive oil (for frying and drizzling)

  • Lemon wedges

  • Fresh dill or chives (optional)

  • Salt & pepper to taste


Instructions:

  1. Fry the Eggs
    Heat a nonstick skillet with a bit of olive oil over medium heat. Crack in the eggs and fry until whites are set and yolks are done to your liking. Season with salt and pepper.

  2. Assemble the Plate
    On a large plate, arrange a handful of greens as the base. Add the smoked salmon, avocado slices, cherry tomatoes, cucumber, and red onion.

  3. Top with Eggs
    Place the fried eggs on the plate, either on the greens or alongside the veggies.

  4. Garnish & Serve
    Drizzle olive oil and squeeze fresh lemon juice over the veggies and salmon. Top with fresh herbs if using. Serve immediately.
