Slow Cooker Teriyaki Chicken

Slow Cooker Teriyaki Chicken is such a flavorful and easy dish to make! Here’s a simple recipe to get you started:

Ingredients:

  • 4 boneless, skinless chicken breasts or thighs
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey or brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (or 1 tsp ground ginger)
  • 1 tablespoon cornstarch (optional, for thicker sauce)
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 2 green onions, sliced (optional, for garnish)

Instructions:

  1. Prep the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, water, garlic, and ginger. If you’d like the sauce to be thicker, mix the cornstarch with a little bit of water and add it to the sauce.
  2. Place the chicken in the slow cooker: Put the chicken breasts (or thighs) at the bottom of the slow cooker.
  3. Pour the sauce over the chicken: Once the sauce is mixed, pour it over the chicken in the slow cooker.
  4. Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  5. Shred the chicken (optional): Once the chicken is done, you can shred it with two forks for a pulled-chicken texture, or serve it whole.
  6. Finish: Drizzle a little sesame oil over the chicken, sprinkle sesame seeds and green onions on top if you like, and serve over steamed rice or veggies.
