Slow Cooker Rotisserie Chicken

Here’s a simple and delicious recipe for Slow Cooker Rotisserie Chicken:

Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, quartered
  • 4-5 garlic cloves, crushed
  • 1 onion, quartered
  • Fresh herbs (like rosemary or thyme), optional
  • Olive oil or melted butter for brushing

Instructions:

  1. Prepare the Chicken:
    • Rinse the chicken inside and out, then pat it dry with paper towels.
    • Remove any giblets from the cavity if included.
    • Tuck the wings under the body and tie the legs together with kitchen twine.
  2. Make the Spice Rub:
    • In a small bowl, mix together the paprika, garlic powder, onion powder, thyme, oregano, salt, and pepper.
  3. Season the Chicken:
    • Rub the chicken all over with the spice mix, ensuring an even coating. You can also sprinkle some inside the cavity for extra flavor.
    • Place the lemon quarters, crushed garlic, onion, and fresh herbs inside the cavity.
  4. Slow Cook the Chicken:
    • Place a few crumpled balls of aluminum foil or a rack at the bottom of your slow cooker to keep the chicken from sitting in its juices (this helps the skin crisp up).
    • Place the chicken breast-side up on top of the foil balls or rack.
    • Brush the chicken with olive oil or melted butter for extra flavor and crispiness.
  5. Cook:
    • Cover the slow cooker and cook on low for 6-8 hours, or until the internal temperature of the chicken reaches 165°F (75°C) in the thickest part of the thigh.
  6. Finish and Serve:
    • Optional: For extra crispy skin, carefully transfer the cooked chicken to a baking sheet and broil in the oven for 4-5 minutes until the skin is golden and crisp.
    • Let the chicken rest for about 10 minutes before carving.
  7. Serve:
    • Carve the chicken and serve it with your favorite sides. The slow cooker will have rendered the meat incredibly juicy and flavorful!
