Slow Cooker Hamburger Potato Casserole

Here’s a delicious and easy recipe for Slow Cooker Hamburger Potato Casserole:

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 4-5 medium potatoes, peeled and thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1 cup sour cream
  • 1/2 cup milk
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon dried thyme or parsley (optional)

Instructions:

  1. Prepare the Beef:

    • In a skillet, brown the ground beef over medium heat. Once cooked through, drain any excess fat.
    • Add the chopped onion to the beef and sauté until softened (about 3-5 minutes). Season with salt, pepper, garlic powder, and onion powder if using.
  2. Prepare the Sauce:

    • In a separate bowl, mix together the cream of mushroom soup, sour cream, and milk. Stir in a little salt and pepper to taste.
  3. Layer the Ingredients in the Slow Cooker:

    • Start with a layer of sliced potatoes at the bottom of the slow cooker.
    • Add half of the cooked ground beef mixture over the potatoes.
    • Pour half of the soup mixture over the beef.
    • Sprinkle with a layer of shredded cheddar cheese.
    • Repeat the layers: potatoes, beef, soup mixture, and top with cheese.
  4. Cook:

    • Cover the slow cooker and cook on low for 4-6 hours or high for 2-3 hours. The potatoes should be tender, and the casserole should be bubbly and hot.
  5. Serve:

    • Once done, give it a good stir and serve hot.

Tips:

  • You can add some veggies like peas or carrots to make it more hearty.
  • If you like it extra cheesy, feel free to sprinkle more cheese on top just before serving.
  • For added flavor, you can top with fresh herbs like parsley or chives.
