Slow Cooker Beef in Onion Gravy

Sure, here’s a simple recipe for Slow Cooker Beef in Onion Gravy:

Ingredients:

  • 2 pounds beef chuck roast, cut into chunks
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening)

Instructions:

  1. Season the beef chunks with salt and pepper.
  2. Place the sliced onions and minced garlic in the bottom of the slow cooker.
  3. Add the seasoned beef chunks on top of the onions and garlic.
  4. In a bowl, mix together the beef broth, Worcestershire sauce, tomato paste, dried thyme, and dried rosemary. Pour this mixture over the beef and onions in the slow cooker.
  5. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours, or until the beef is tender and cooked through.
  6. Once the beef is cooked, you can thicken the gravy if desired. To do this, mix the cornstarch with a little water to create a slurry, then stir it into the slow cooker. Cook for an additional 15-20 minutes on high, or until the gravy has thickened.
  7. Taste and adjust seasoning with salt and pepper if needed.
  8. Serve the slow cooker beef in onion gravy over mashed potatoes, rice, or with your favorite side dishes. Enjoy!
